  1. 2 cup thick poha / flatten rice
  2. 7-8 cashews
  3. 2 medium onion
  4. 1/2 of a medium capsicum
  5. 1 medium carrot
  6. 5-6 French beans
  7. 3 green chilli
  8. 1 tbsp ginger paste / crushed
  9. 1 small bowl boiled green peas
  10. 1/2 of Lemon
  11. 1 tsp Mustard seeds
  12. 2 small Bay leaf
  13. 1/4 tsp turmeric powder (optional)
  14. 1 curry leaves stick
  15. as per taste Salt, 1/2 tsp sugar

Steps to make to make Veggies Poha

  1. Chop veggies, par boil peas and keep aside
  2. Assemble all other ingredients
  3. Wash flatten rice very nicely and keep in colander to drain excess water. Fry cashews till golden brown and keep aside.
  4. In moderately heated pan add oil, add mustard seeds + bay leaf and allow to crackle, then add curry leaves and sauté for few seconds.
  5. Then add onion and sauté for few seconds, then add ginger and sauté till onion turns translucent. Add chopped veggies + little salt + turmeric and stir fry till veggies turn soft and crunchy. This process takes around 3-4 minutes.
  6. Add par boiled green peas and stir fry for 1– 2 minutes. Then add washed Flatten rice +sugar + salt, mix gently and simmer for 2-3 minutes.
    Lastly squeeze lemon juice and mix well, POHA is ready.
  7. Garnish with cashews and serve hot hot.
