  18. 2-3 green chillies chopped
  19. 1/4 cup Szechwan Chutney sauce
  20. 1/2 Tbsp soya sauce
  21. 1/2 tsp black pepper powder
  22. 1 tsp sugar
  23. as required Oil
  24. as per taste Salt
  25. For garnish
  26. as required Fried noodles
  27. As required Green onions chopped fine

Instructions to make to make Szechwan Noodle Rice

  1. For Szechwan Chutney sauce - soak Kashmiri Red chillies in water with garlic for 30 mins. Strain and make a paste in a blender
  2. In a wok heat oil, add ginger, add paste, add vinegar, add tomato ketchup, salt. Mix very well for 3-4 mins. The Szechwan Chutney paste is ready to use
  3. For Rice- Noodles - in a bowl boil water and add rice. Cook until 80% done and set aside. Drain and add oil and put in the refrigerator for 30 mins.
  4. Boil noodles and drain and set aside. When cooled a little break the noodles into small sizes and keep it ready.
  5. Chop vegetables and keep ready. Chop ginger and garlic, green chillies and spring onions and set aside
  6. In a wok heat oil and add ginger-garlic, green chillies, carrot, beans, capsicums and sauté for 2 mins. Add soya sauce, toss. Add black pepper powder, sugar, Szechwan Chutney sauce and stir well. Add rice, noodles and toss for 3-4 mins until all combined. Add salt and spring onions and toss once. Set aside
  7. For plating add the Rice-Noodles in a bowl, garnish with fried noodles and spring onions chopped. Enjoy
