- 2 cup basmati rice (washed and soaked)
- 1 red onion (chopped)
- 1/2 cup corn
- 1/2 cup green peas
- 1/2 cup boiled red kidney beans
- 1/2 cup capsicum (cubed)
- 1/2 cup red bell pepper (cubed)
- 1/2 cup yellow bell pepper (cubed)
- 1/2 cup green spring onion (chopped)
- 2 tbsp garlic grated
- 2 tbsp butter
- 2 green chilli chopped
- 1/2 cup tomato purée
- 2 tbsp tomato sauce
- Handful chopped coriander
- 2 tsp red chilli flakes
- 2 tsp oregano
- 1 tsp black pepper powder
- 1/2 tsp Jeera powder
- as per taste Salt
- 3 cup hot water
- 1/2 tsp sugar (optional)
- as required Cheese to sprinkle while serving and lemon wedges
Instructions to make to make Mexican Rice
- Heat wok or pan add butter then add grated garlic sauté it for a minute then add chopped onion and sauté it till translucent.



- Then add tomato purée mix it well then add in chilli flakes,oregano,salt,sugar,black pepper powder and zeera powder mix it nicely and add tomato sauce now sauté it for 2 to 3 minutes or till the oil separates.



- Now add the veggies corn,peas,bell peppers and capsicum sauté it for 2 to 3 minutes then add in the washed and soaked rice mix it well and sauté it for 5 minutes or till all moisture leaves.



- Further add hot water to the rice and cook it on high flame till rice come up, then add in boil red beans,chopped green chilli,chopped spring onion and chopped coriander mix it with light hand cover and cook it on low flame till the rice cooked or for 10 minutes.



- Mix it in between one or two times so that it does not stick to bottom.delicious Mexican rice is ready to serve hot, sprinkle some cheese with lemon wedges,enjoy with your family and friends
